Job Title: Tandoor Chef (Tandoor Kebab / Breads)

Responsibilities

  • Heating and Maintaining: Heating the tandoor to the right temperature and managing it throughout the cooking process to ensure consistent results.
  • Cleaning and Maintenance: Regularly cleaning and maintaining the tandoor for optimal performance and hygiene.
  • Cooking Tandoor Dishes:
  • Kebabs and Meats: Preparing and cooking a variety of kebabs, including chicken tikka, seekh kebabs, lamb, and fish, by marinating and skewering meats.
  • Breads: Making traditional breads like naan, roti, and paratha, and ensuring they are cooked evenly.
  • Food Preparation and Marination:
  • Marinating Proteins: Preparing and marinating meats, fish, and vegetables using various spices, yogurt, and other ingredients to achieve desired flavors.
  • Bread Dough: Kneading dough and preparing batches for the tandoor.
  • Quality Control and Presentation
  • Ensuring Quality: Monitoring cooking to ensure consistent quality, texture, and flavors.
  • Presentation: Plating tandoor items attractively before serving.
  • Inventory and Supplies Management
  • Managing Ingredients: Tracking supplies of ingredients like spices, flour, and meats, and coordinating restocking when needed.
  • Skewers and Tools: Ensuring skewers, brushes, and other tools are maintained and cleaned.
  • Health and Safety Standards
  • Food Safety: Adhering to food safety guidelines, particularly due to high temperatures and open flames in the tandoor.
  • Temperature Control: Ensuring meats are cooked to safe temperatures to prevent foodborne illnesses.
  • Menu Development (Optional)
  • Innovation: Contributing to menu development with new recipes or variations on traditional tandoor dishes.
  • Specials and Promotions: Occasionally suggesting or creating special tandoor items for promotions or events.
